- 1 Dutch oven
Ingredients
- 4 tbsp Butter
- 2 Onions, minced
- 2 Cloves garlic, minced
- 1 tsp Oregano
- Salt
- 2 Chipotle Peppers in Adobo Sauce
- 25 g Chili powder
- 1 tbsp Cumin
- 110 g Tomato paste
- 2 lb Ground chuck (80% fat)
- 800 g Canned whole peeled tomatoes Drained, chopped
- 425 g Canned red kidney beans Drained
- 1 cup Chicken stock
- 2 tbsp Maseca instant corn flour
- Pepper
Toppings
- Sour cream
- Scallion
Instructions
- Cook onion, garlic, oregano, salt in butter in Dutch oven until onions are just starting to brown
- Add chipotles, chile powder, cumin, cook 1 minute
- Add tomato paste, cook 1 minute
- Add ground beef, stirring until brown, ~5 minutes
- Add tomatoes, beans, stock, cornmeal
- Simmer ~30 minutes
- Add vodka
