Tomato Sauce and Meatballs

Tomato Sauce

Equipment

  • Food mill

Ingredients

  • Olive oil
  • 1/2 Chopped onion
  • 5 28oz cans San Marzano whole peeled tomatoes
  • 1 tbsp Salt
  • Fresh basil

Instructions

  • Coat the bottom of the pot in olive oil
  • Cook onion until translucent
  • Using the food mill with the largest grate, mill the tomatoes into the pot
  • Add salt
  • Add fresh basil (do not chop!)
  • Low simmer for 2-3 hours, with the cover on loosely. Stir every 20 minutes. If you're making meatballs too, start now!
  • Scoop the basil out, discard

Meatballs

Equipment

  • Pizza Peel

Ingredients

  • 2-3 Cloves minced garlic
  • 2 cups Plain Breadcrumbs
  • 1 lb Ground beef
  • 1 lb Ground pork
  • Pepper
  • Parsley
  • 2 Eggs

Instructions

  • Moisten the breadcrumbs
  • Add all ingredients together
  • Mix thoroughly
  • Roll into balls
  • Add to sauce and let them cook together! Be careful when stirring that you don't mush the meatballs together
